Andrea uses the same Christmas recipes she wrote when she was a child - every year.
Gran’s brown biscuits
500g white sugar
335g golden syrup
1 kg plain wheat flour
125g blanched and chopped almonds
7g ground cloves
25g ground cinnamon
Candied citrus peel and candied orange peel, to taste
Chopped peel from 3 organic or untreated lemons
This is what you do:
Mix butter, sugar and golden syrup in a saucepan and bring slowly to a boil.
Dissolve the potash in a little boiling water and blend it into the butter/sugar mixture.
Sift the spices into the flour and then add the lemon peel.
Knead the flour and sugar together and roll out the dough into long ‘sausages’. Chill or freeze the dough for a couple of hours. This makes it easier to cut the dough into slices.
I adore thin, crispy brown biscuits, so I always slice them very thinly and then go over them with the rolling pin with a light touch to make them even thinner. But it’s a matter of personal taste.
Place the biscuits on a baking tray lined with baking paper and bake them in the oven for approx. 4-5 minutes at 190-200° C. Keep an eye on them because they bake very quickly!
